  • 2 cups cooked broccoli, chopped into small pieces Ensure broccoli is well-drained.
  • 1 ½ cups shredded cheddar cheese
  • ½ cup breadcrumbs (preferably panko) For extra crispiness.
  • 2 large eggs
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste

  • 2 tablespoons grated Parmesan cheese Optional for added flavor.
  • 1 tablespoon fresh parsley, chopped Optional for garnish.

Instructions

Preparation

  • Cook the broccoli until tender. Chop into small pieces and ensure it is well-drained.

Mixing

  • In a large mixing bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, eggs, olive oil, garlic powder, onion powder, salt, and pepper. If using, add Parmesan cheese and parsley. Mix thoroughly until cohesive.

Forming

  • Form the mixture into balls about the size of a golf ball, ensuring they are compact.

Baking

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the balls. Bake for 20-25 minutes or until golden brown and crispy, flipping halfway through.

Serving

  • Remove from oven, let cool slightly, and serve warm with your favorite dipping sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze in a single layer and transfer to a freezer-safe bag for up to 3 months. For a healthier option, consider air frying instead of baking.
