Ingredients

Wet Ingredients

  • 1 cup unsalted butter, melted and cooled slightly Use high-quality butter for the best flavor.
  • 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1.5 tsp vanilla extract

Dry Ingredients

  • 2.5 cups all-purpose flour
  • 1 tsp cinnamon powder
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp baking powder

Mix-Ins

  • 1.5 cups roughly chopped pecans (toasted if preferred) Toasting the pecans enhances their flavor.
  • 1/2 cup toffee bits (optional)

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the melted butter, granulated sugar, and brown sugar until well combined.
  • Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In another bowl, whisk together the flour, cinnamon, cornstarch, baking soda, and baking powder.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chopped pecans and toffee bits, if using.
  • Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, leaving space between each.

Baking

  • Bake for 10-12 minutes, or until the edges are golden but the centers are soft.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are delightful served warm or at room temperature. They pair wonderfully with a glass of milk or a cup of coffee. Store in an airtight container at room temperature for up to a week. Freeze for longer storage, separated with parchment paper to prevent sticking.
