  • 3/4 cup unsalted butter (softened but not melted)
  • 3/4 cup brown sugar (packed)
  • 1/2 cup white sugar
  • 1 large egg
  • 1 large egg yolk (discard the egg white)
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour (spooned & leveled)
  • 3/4 teaspoon baking soda
  • 1/4 - 1/2 teaspoon salt (to taste)
  • 1 1/4 cups butterscotch chips (divided)

How to Make Butterscotch Cookies

  • In a large bowl, beat together the butter, brown sugar, and white sugar until fluffy.
  • Add in the egg, egg yolk, and vanilla extract.
  • Mix in the flour, baking soda, and salt on low speed.
  • Stir in 1 cup of butterscotch chips (save the remaining 1/4 cup for later).
  • Refrigerate the cookie dough for 2 hours or overnight.
  • Preheat the oven to 350°F and line baking sheets with parchment paper.
  • Form dough into balls and place them on the prepared baking sheets.
  • Bake for 9-11 minutes, then place extra butterscotch chips on top of each cookie.
  • Cool on the baking sheet before transferring to a wire rack.

Notes

For extra flavor, try adding a pinch of sea salt on top of the cookies before baking.
