3/4cupunsalted butter (softened but not melted)
3/4cupbrown sugar (packed)
1/2cupwhite sugar
1largeegg
1largeegg yolk (discard the egg white)
2teaspoonsvanilla extract
2cupsall-purpose flour (spooned & leveled)
3/4teaspoonbaking soda
1/4 - 1/2teaspoonsalt (to taste)
1 1/4cupsbutterscotch chips (divided)
Instructions
How to Make Butterscotch Cookies
In a large bowl, beat together the butter, brown sugar, and white sugar until fluffy.
Add in the egg, egg yolk, and vanilla extract.
Mix in the flour, baking soda, and salt on low speed.
Stir in 1 cup of butterscotch chips (save the remaining 1/4 cup for later).
Refrigerate the cookie dough for 2 hours or overnight.
Preheat the oven to 350°F and line baking sheets with parchment paper.
Form dough into balls and place them on the prepared baking sheets.
Bake for 9-11 minutes, then place extra butterscotch chips on top of each cookie.
Cool on the baking sheet before transferring to a wire rack.
Notes
For extra flavor, try adding a pinch of sea salt on top of the cookies before baking.
