Ingredients

Wet Ingredients

  • 1 cup unsalted butter (melted) Make sure your butter is fully melted.
  • 1.5 cups brown sugar Dark brown sugar will yield a richer flavor.
  • 2 large eggs
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour Can be substituted with gluten-free flour blend.
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

Mix-ins

  • 1 cup butterscotch chips Adjust amount to taste.
  • 1 cup toffee bits Adjust amount to taste.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  • In a large bowl, mix together the melted butter and brown sugar until smooth.
  • Add the eggs and vanilla extract, and mix until fully combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Slowly add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the butterscotch chips and toffee bits.
  • Spread the cookie dough evenly in the prepared baking pan.

Baking

  • Bake for 25-30 minutes, or until the edges are lightly golden.
  • Allow to cool before cutting into bars and serving.

Notes

These cookie bars can be served warm or at room temperature. For an extra treat, serve with vanilla ice cream or chocolate sauce. Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
