  • 2 1/2 cups flour
  • 1 3 ounce package Lime Jello
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 cups sugar
  • 1 1/2 cups vegetable oil
  • 3/4 cup Nellie and Joe's Key Lime Juice
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon Vanilla
  • 5 large eggs beaten
  • 1 teaspoon lime green food coloring gel
  • 1 stick butter softened
  • 1 package cream cheese 8 ounces
  • 1 pound powdered sugar
  • 3-4 drops lemon juice

Instructions
 

  • Preheat the oven to 350 degrees. Grease and flour a 9 X 13 inch dish.
  • In a mixing bowl, combine Lime Jello, sugar, flour, salt, baking powder, and baking soda.
  • Add oil, Key Lime Juice, vanilla, eggs, and lime green food coloring. Mix well.
  • Pour the batter into the prepared dish and bake for 25-30 minutes.
  • For the icing, cream together butter, cream cheese, and powdered sugar. Add lemon juice and mix until smooth.
  • Ice the cooled cake and sprinkle with graham cracker crumbs or green sugars. Garnish with a slice of lime before serving.

Notes

For an extra citrus kick, add lime zest to the frosting.
