  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil For cooking
  • 1 tablespoon Cajun seasoning Adjust to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 pieces bell peppers (red, green, or yellow), sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil (for sautéing)
  • to taste Fresh parsley or cilantro, chopped (optional)

Instructions

Preparation

  • In a small bowl, combine the Cajun seasoning, garlic powder, onion powder, paprika, thyme, salt, and pepper. Rub this spice mix over the chicken breasts.

Cooking

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6–7 minutes per side until cooked through and golden. Remove from the skillet and set aside.
  • In the same skillet, add 1 tablespoon of olive oil and sauté the sliced bell peppers and onion for 5–6 minutes until softened. Add minced garlic and cook for an additional 1–2 minutes until fragrant.
  • Slice the chicken into thin strips and return it to the skillet with the vegetables. Toss and cook for 2–3 minutes to meld flavors.
  • Garnish with parsley or cilantro, if desired, and serve hot over rice, quinoa, or with your preferred side.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat before serving.
