Instructions
Preparation of Mashed Potatoes
Peel and cut the russet potatoes into even chunks. Add to a large pot of salted water and bring to a boil.
Cook for 15-20 minutes until fork-tender. Drain and return to the pot.
Mash potatoes with a masher or hand mixer until smooth. Add butter and milk, then season with salt and pepper.
Cover and set aside to keep warm.
Cooking Seafood
Pat the shrimp and salmon fillets dry, season with Cajun seasoning.
Heat olive oil in a skillet over medium-high heat, add shrimp in a single layer and cook for 2-3 minutes on each side.
Remove shrimp and set aside.
In the same skillet, add butter and let melt. Cook salmon for 4-5 minutes on each side until cooked through.
Remove salmon and set aside with shrimp.
Making the Sauce
Melt 1 tablespoon of butter in the same skillet, add minced garlic and sauté until fragrant.
Add heavy cream, chicken broth, Dijon mustard, salt, black pepper, and smoked paprika. Stir and bring to a simmer.
Let sauce cook for 4-5 minutes until it thickens slightly.
Return the shrimp and salmon to the skillet, spoon sauce over and simmer for an additional 2-3 minutes.
Preparing Green Beans
Boil salted water, add green beans and cook for 3-4 minutes until tender-crisp.
Drain green beans, melt butter in a skillet, add minced garlic and red pepper flakes, sauté until fragrant.
Add green beans to the skillet, sauté until slightly caramelized.
Serving
Plate mashed potatoes, top with salmon and shrimp, drizzle with garlic cream sauce.
Serve sautéed green beans on the side. Garnish with fresh herbs or lemon wedges.
