Ingredients

For the crust

  • 1.5 cups 1 ½ cups graham cracker crumbs
  • 0.5 cups ½ cup unsalted butter, melted

For the filling

  • 2 cups 2 cups cream cheese, softened
  • 1 cups 1 cup sugar
  • 1 teaspoon 1 teaspoon vanilla extract

  • 2 cups 2 cups peeled and diced apples
  • 1 cups 1 cup caramel sauce
  • 0.5 teaspoon ½ teaspoon cinnamon

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of the prepared baking dish to create a crust.

Making the filling

  • In a large mixing bowl, beat together cream cheese, sugar, and vanilla until smooth.
  • Add eggs one at a time, mixing well after each addition.
  • Fold in the diced apples and cinnamon.

Baking

  • Pour the cheesecake mixture over the crust in the baking dish.
  • Drizzle caramel sauce over the top.
  • Bake for 30-35 minutes, or until the center is set.

Cooling and Serving

  • Allow to cool completely, then chill in the refrigerator before slicing into bars.
  • Serve with additional caramel sauce if desired.

Notes

For a more intense apple flavor, consider using a mix of tart and sweet apples, such as Granny Smith and Fuji. You can make the crust ahead of time and refrigerate it until you’re ready to prepare the cheesecake filling. Do not overbake the cheesecake bars; the center should still have a slight jiggle when you take them out of the oven. For a fun twist, add chopped nuts, like pecans or walnuts, to the cheesecake mixture for added crunch.
