Dressing

  • 1/4 cup Greek yogurt or mayonnaise For a lighter option, use fat-free Greek yogurt.
  • 1 tablespoon honey or maple syrup Sweetener to taste.
  • 1 tablespoon lemon juice Adds freshness.
  • Salt and pepper to taste Adjust according to preference.

Instructions

Preparation

  • In a large bowl, combine the grated carrots and diced apples.
  • Add the raisins or dried cranberries and mix well.
  • In a small bowl, whisk together the Greek yogurt (or mayonnaise), honey (or maple syrup), and lemon juice.
  • Pour the dressing over the salad and toss to coat everything evenly.
  • Season with salt and pepper to taste.
  • Serve immediately or chill in the refrigerator for about 30 minutes before serving for enhanced flavor.

Notes

Best served fresh but can be stored in an airtight container in the refrigerator for 2-3 days. May soften slightly over time.
