Preparation
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
Create a well in the dry mixture; add the eggs and oil or melted butter. Mix until smooth.
Fold in the shredded carrots and nuts if using.
Baking
Pour the batter into the prepared pan and spread evenly.
Bake for 25-30 minutes or until a toothpick comes out clean.
Allow to cool completely before cutting into squares.
Optionally frost with cream cheese frosting.
Notes
To store, place in an airtight container at room temperature for up to three days, refrigerate for up to a week, or freeze for up to three months.
