Ingredients

For the Cake

  • 4 pieces eggs
  • 1.5 cups granulated sugar
  • 1 cup milk
  • 1 cup oil
  • 2.5 cups flour
  • 2 packets baking powder
  • 1 packet vanilla
  • 2 cups grated carrots Use fresh, finely grated carrots for moisture.
  • 1 cup chopped walnuts Toast for deeper flavor.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  • In a large bowl, beat the eggs and granulated sugar until creamy.
  • Add milk and oil, mixing well.
  • In another bowl, combine flour, baking powder, and vanilla, then gradually add to the wet mixture. Mix until just combined.
  • Stir in grated carrots and walnuts.
  • Pour the batter into the prepared cake pan.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  • Allow to cool before serving.

Notes

Best served slightly warm or at room temperature. Dress with powdered sugar or cream cheese frosting for a special touch.
