Instructions
Preparation
Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
In a large bowl, beat the eggs and granulated sugar until creamy.
Add milk and oil, mixing well.
In another bowl, combine flour, baking powder, and vanilla, then gradually add to the wet mixture. Mix until just combined.
Stir in grated carrots and walnuts.
Pour the batter into the prepared cake pan.
Baking
Bake for 30-35 minutes or until a toothpick inserted comes out clean.
Allow to cool before serving.
Notes
Best served slightly warm or at room temperature. Dress with powdered sugar or cream cheese frosting for a special touch.
