Ingredients

Crust

  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • 1 tbsp light brown sugar (firmly packed)
  • 7 tbsp unsalted butter (melted)

Cheesecake Filling

  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs (room temperature)

Chocolate Ganache Topping

  • 4 oz semisweet or dark chocolate (finely chopped)
  • 1/2 cup heavy cream

Instructions

Cheesecake Bars

  • For the Ganache: Place chopped chocolate in a heatproof bowl. Heat cream in a saucepan until simmering, then pour over chocolate. Let sit for 5 minutes, then whisk until smooth. Pour over cheesecake bars and refrigerate until set.

Notes

For a richer flavor, add a touch of instant espresso powder to the cheesecake batter.
