  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika (optional) For extra flavor.
  • Fresh parsley for garnish (optional)

Instructions

Preparation

  • Preheat the oven to 425°F (220°C).
  • Slice the zucchinis into 1/4 inch thick rounds.
  • In a mixing bowl, combine the shredded cheese, breadcrumbs, minced garlic, olive oil, salt, pepper, and paprika.
  • Arrange the zucchini rounds on a baking sheet lined with parchment paper.
  • Top each zucchini round with the cheese mixture, pressing lightly to help it stick.

Baking

  • Bake for 15-20 minutes, or until the zucchini is tender and the topping is golden brown.
  • Garnish with fresh parsley, if desired, and serve warm.

Notes

These rounds can be enjoyed as an appetizer or a side dish. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
