  • 1 cup Heavy Cream Consider light cream or coconut milk as alternatives.

  • 1 cup Mozzarella Cheese Substitutes can include Gouda or Monterey Jack.
  • ½ cup Parmesan Cheese Grated Pecorino Romano can also be substituted.
  • ½ cup Cheddar Cheese Any melty cheese will work.
  • ¼ cup Fresh Parsley Chives or cilantro can be used as alternatives.

Instructions

Preparation

  • Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  • Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook for about 6-7 minutes on each side, or until fully cooked. Remove the chicken from the skillet and let rest before slicing into bite-sized pieces.
  • In the same skillet, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring well to combine. Let it simmer for a few minutes.
  • Add the cooked rotini and sliced chicken back into the skillet. Mix in the mozzarella, Parmesan, and cheddar cheeses. Stir until everything is well coated and the cheese is melted.
  • Top with fresh parsley before serving.

Notes

Serve hot with a side salad or garlic bread. For extra flavor, sprinkle extra cheese on top before serving. Store leftovers in an airtight container for up to 3 days; reheat with a splash of cream or broth.
