Ingredients

For the puffs

  • 2 cups mashed potatoes Cold mashed potatoes for best texture.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to experiment with different cheeses.
  • 1/4 cup green onions (chopped) For garnish and flavor.
  • 1/2 cup breadcrumbs Can be substituted with gluten-free breadcrumbs or crushed cornflakes.
  • 1/2 teaspoon garlic powder Adds flavor.
  • to taste Salt and pepper Season to your preference.
  • Oil for frying For drizzling or spraying on puffs.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, combine the mashed potatoes, shredded cheese, green onions, garlic powder, salt, and pepper. Mix well.
  • Form the mixture into small puffs or balls and roll them in breadcrumbs.
  • Arrange the potato puffs on a baking sheet.
  • Drizzle with oil or spray with cooking spray.

Cooking

  • Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy on the outside. Serve warm.

Notes

These puffs can be served warm with dipping sauces like sour cream, ranch dressing, or marinara. If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a preheated oven at 350°F (175°C) for about 10 minutes.
