Ingredients

For the Roll Ups

  • 4 pieces Low-carb tortillas Can substitute with regular tortillas if not following a low-carb diet
  • 40 slices Pepperoni slices Adjust according to preference
  • 2 cups Shredded mozzarella cheese Can experiment with other cheese types like cheddar or provolone
  • 1/2 cup Pizza sauce For spreading on the tortillas
  • 2 tablespoons Olive oil For brushing the roll-ups
  • 1 teaspoon Italian seasoning For added flavor

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Place a low-carb tortilla on a clean surface.
  • Spread a thin layer of pizza sauce over the tortilla.
  • Add a layer of pepperoni slices and sprinkle shredded mozzarella cheese on top.
  • Roll the tortilla tightly, like a burrito, and place seam-side down on a baking sheet.
  • Brush the outside of the roll-ups with olive oil and sprinkle with Italian seasoning.
  • Bake in the preheated oven for 10-12 minutes or until golden and crispy.
  • Allow to cool slightly, then slice and serve with extra pizza sauce for dipping.

Notes

These roll-ups can be served warm as an appetizer or snack, paired with marinara or pizza sauce. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven to maintain crispiness.
