  • 7-8 large large potatoes, peeled and diced Choose starchy potatoes like Russets for a creamier texture.
  • 4 tablespoons melted butter
  • 120 ml sour cream Can be substituted with Greek yogurt or cream cheese.
  • 120 ml garlic powder Adjust to taste.
  • 120 ml black pepper Adjust to taste.
  • 1 teaspoon salt Or to taste.
  • 1 teaspoon dried parsley flakes
  • 60 ml chopped green onions Can substitute with regular onion.

Preparation

  • In a large bowl, mix the diced potatoes with the melted butter, sour cream, garlic powder, black pepper, salt, dried parsley, and green onions.
  • Transfer the mixture to the slow cooker.

Cooking

  • Cover and cook on low heat for 6 to 8 hours or on high heat for 3 to 4 hours, until the potatoes are tender.
  • Serve hot and enjoy!

Notes

Leftover Cheesy Potatoes can be stored in an airtight container in the refrigerator for about 3 to 5 days. Reheat in the microwave or oven, adding a splash of milk or sour cream to restore creaminess. For variations, add cooked bacon bits for a smoky flavor or different cheeses for a kick.
