  • 2 cups leftover turkey, shredded
  • 2 cups broccoli florets, steamed
  • 2 cups cooked rice or pasta
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the shredded turkey, steamed broccoli, cooked rice or pasta, cream of mushroom soup, milk, cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.

Baking

  • Pour the mixture into a greased casserole dish. If using, sprinkle breadcrumbs on top for added crunch.
  • Bake in the preheated oven for 25-30 minutes or until the casserole is hot and bubbly.
  • Remove from the oven, let it cool for a few minutes, then serve and enjoy.

Notes

This casserole pairs well with a simple green salad, crusty bread, or warm biscuits. It can easily be doubled or tripled for potlucks. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for up to three months.
