  • 1 cup pitted medjool dates
  • 1/2 cup walnuts Try toasting the walnuts for added flavor.
  • 1/2 cup oats Use certified gluten-free oats for a gluten-free option.
  • 1 tbsp chia seeds
  • 1 tbsp flaxseeds Can substitute with sunflower seeds.
  • 1 tbsp maple syrup Can substitute with honey or agave syrup.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  • In a food processor, combine the pitted dates, walnuts, oats, chia seeds, flaxseeds, and maple syrup.
  • Pulse the mixture until it comes together and becomes sticky.
  • Transfer the mixture to the prepared baking dish and press it down evenly.
  • Bake for 15-20 minutes until slightly golden.
  • Allow to cool completely, then cut into bars.

Notes

Store in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks. For longer storage, freeze for up to three months.
