How to Make Chewy Oatmeal Raisin Cookies
Preheat oven to 180°C (350°F) standard / 160°C (320°F) fan-forced. Line two baking trays with baking paper.
In a large mixing bowl, cream together butter and sugars until smooth. Add vanilla and egg, then beat until combined.
Add flour, baking soda, cinnamon, and salt. Mix until a soft cookie dough forms. Stir in rolled oats and raisins.
Scoop cookie dough onto baking trays, bake for 10-12 minutes until golden brown. Cool on a wire rack before storing in an airtight container.
