  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 105 grams plain flour or all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 100 grams whole rolled oats
  • 120 grams raisins or sultanas

How to Make Chewy Oatmeal Raisin Cookies

  • Preheat oven to 180°C (350°F) standard / 160°C (320°F) fan-forced. Line two baking trays with baking paper.
  • In a large mixing bowl, cream together butter and sugars until smooth. Add vanilla and egg, then beat until combined.
  • Add flour, baking soda, cinnamon, and salt. Mix until a soft cookie dough forms. Stir in rolled oats and raisins.
  • Scoop cookie dough onto baking trays, bake for 10-12 minutes until golden brown. Cool on a wire rack before storing in an airtight container.

Notes

For extra flavor, try adding a dash of nutmeg or ginger to the cookie dough.
