Instructions
Preparation
In a small bowl, mash the avocado with lemon juice, salt, and pepper to prepare the avocado spread.
Assembly
Spread mayonnaise (if using) on one side of each slice of bread.
On the other side of one slice, spread the avocado mixture.
Layer on the shredded chicken and cheese, then top with the second slice of bread, mayo side facing out.
Cooking
Melt butter in a skillet over medium heat.
