Ingredients

  • 2 slices sourdough or artisan bread
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 1/2 ripe avocado, mashed
  • 2 slices cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter (for toasting)
  • Salt and pepper to taste

Instructions

Preparation

  • In a small bowl, mash the avocado with lemon juice, salt, and pepper to prepare the avocado spread.

Assembly

  • Spread mayonnaise (if using) on one side of each slice of bread.
  • On the other side of one slice, spread the avocado mixture.
  • Layer on the shredded chicken and cheese, then top with the second slice of bread, mayo side facing out.

Cooking

  • Melt butter in a skillet over medium heat.
  • Add the sandwich and grill for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.

Serving

  • Remove from the pan, slice in half, and serve hot.

Notes

Serve warm with a side of crispy fries, salad, or soup. Consider drizzling with hot sauce or serving with a tangy dipping sauce. Use fresh ingredients for best flavor. For added crunch, toast the bread before assembling or use a panini press.
