Preparation
Preheat the oven to 350°F (175°C).
In a large bowl, combine the cooked chicken, cream of chicken soup, sour cream, shredded cheddar cheese, and frozen mixed vegetables. Season with salt and pepper to taste.
Transfer the mixture to a greased casserole dish.
In a separate bowl, mix the crushed Ritz crackers with melted butter until well combined.
