Ingredients

For the Chicken

  • 1 lb Diced chicken breast Boneless and skinless

  • 2 lbs Potatoes, peeled and cubed Use russet or Yukon gold

  • 1 cup Brown rice, cooked Can substitute with quinoa or couscous
  • 2 cups Cabbage, shredded For freshness

Instructions

Cooking Chicken

  • In a skillet over medium heat, sauté the diced chicken breast with onions and garlic until the chicken is fully cooked and has a nice golden color.

Preparing Mashed Potatoes

  • While the chicken is cooking, prepare your mashed potatoes by boiling them until tender.
  • Mash them together with butter and your choice of herbs until creamy.

Assembling the Bowl

  • Serve the sautéed chicken over a generous helping of the creamy mashed potatoes.
  • Prepare fluffy brown rice to complement the hearty dish.
  • For a refreshing touch, make a salad with shredded cabbage and carrot, drizzled with lemon dressing, and serve it alongside.

Notes

For creamier mashed potatoes, use a potato ricer. This dish is excellent for meal prep; make a larger batch for multiple meals.
