Chicken Posole

A hearty and flavorful chicken posole that's easy to make in a slow cooker, perfect for weeknight dinners and meal prep.

Ingredients

Main Ingredients

  • 1 lb chicken breast (about 2 medium breasts)
  • 4 cups chicken broth (low-sodium if you plan to salt later)
  • 1 can hominy, drained (15–29 oz depending on brand)
  • 1 can green chiles (mild or hot, 4 oz)
  • 1 onion, chopped (yellow or white)
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • Salt and pepper to taste

Toppings

  • sliced radishes
  • lime wedges
  • cilantro

Instructions

Preparation

  • Chop the onion and mince the garlic. Drain the hominy and open the can of green chiles.

Combine in Slow Cooker

  • Place chicken breasts in the bottom of the slow cooker.
  • Pour in 4 cups chicken broth, then add hominy, green chiles, chopped onion, minced garlic, cumin, and a pinch of salt and pepper. Stir gently to distribute.

Cooking

  • Cover and cook on low for 6–8 hours or on high for 3–4 hours. The chicken should reach 165°F (74°C) and be very tender.

Final Touch

  • Remove the chicken to a cutting board or shred it right in the pot with two forks.
  • If removing, shred and return to the slow cooker. Stir to combine.
  • Taste and adjust salt and pepper. Ladle into bowls and top with shredded cabbage, radish slices, cilantro, and a squeeze of lime.

Notes

This recipe is easily customizable with alternative toppings and involves minimal hands-on time. Shredding chicken warm yields better texture. Adjust the thickness of the broth based on your preference.
