  • 2 TBS olive or grapeseed oil
  • 3/4 cup chopped onion
  • 3/4 cup chopped carrots
  • 1/3 cup chopped celery
  • 1 TBS minced ginger
  • 3 cloves garlic (minced)
  • Salt and black pepper to taste
  • 1/2 TBS dried Italian seasoning
  • 2 1/2 quarts chicken broth 10 cups
  • 1 cup rice
  • 1 large egg (beaten)
  • 1 1/2 cups shredded chicken from a rotisserie chicken or homemade
  • 2 TBS fresh chopped parsley optional

Instructions

How to Make Chicken Rice Soup

  • In a large pot, sauté onions, carrots, and celery in oil over medium-high heat for 4 minutes.
  • Add ginger, garlic, salt, pepper, and sauté for 2-3 minutes.
  • Mix in Italian seasoning, chicken broth, and rice. Bring to a boil.
  • Cook for 20 minutes until rice is tender. Remove from heat, add beaten egg, and stir. Add shredded chicken.
  • Adjust seasoning, garnish with parsley, and serve hot. Enjoy!

Feel free to add additional vegetables or herbs for more flavor.
