  • 1 cup ditalini pasta Can be substituted with other small pasta
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth Use low-sodium broth for a healthier option
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish Chopped, for serving

Instructions

Cooking Instructions

  • In a large pot, heat olive oil over medium heat.
  • Add onion, carrots, and celery; sauté until softened.
  • Stir in garlic and cook for an additional minute.
  • Add chicken broth and bring to a boil.
  • Once boiling, add ditalini pasta and cook according to package instructions.
  • Stir in shredded chicken and heat through.
  • Season with salt and pepper.
  • Garnish with fresh parsley and serve warm.

Notes
