  • 2 cups cooked rice Any type of rice can be used, such as jasmine or basmati.
  • 1 pound chicken breast, diced Use boneless, skinless chicken breasts.
  • 1 cup sweet corn Canned or frozen corn works well.
  • 1 tablespoon olive oil For cooking the chicken.
  • 1 teaspoon chili powder Adjust for desired spice level.
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish Chopped cilantro to taste.
  • Lime wedges for serving For squeezing fresh lime juice.

Cooking

  • In a skillet, heat olive oil over medium heat.
  • Add the diced chicken breast, chili powder, garlic powder, salt, and pepper.
  • Cook until the chicken is browned and cooked through, about 5-7 minutes.
  • Stir in the sweet corn and cook for an additional 2 minutes.
  • Serve the chicken and corn mixture over the cooked rice.
  • Garnish with fresh cilantro and serve with lime wedges.

Notes
