Ingredients

Main Ingredients

  • 2 pieces chicken breasts, sliced
  • 8 ounces noodles (e.g., egg noodles or ramen)
  • 1 cup broccoli florets
  • 1 piece carrot, thinly sliced
  • 1 piece bell pepper, sliced

Teriyaki Sauce

  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon sesame oil

Garnishes

  • to taste sesame seeds for garnish
  • to taste green onions for garnish

Instructions

Preparation

  • Cook the noodles according to package instructions. Drain and set aside.
  • In a bowl, combine soy sauce, honey, rice vinegar, cornstarch, and water to make the teriyaki sauce.

Cooking

  • In a pan, heat sesame oil over medium heat. Add sliced chicken and cook until browned and cooked through.
  • Add broccoli, carrots, and bell pepper to the pan and stir-fry until tender.
  • Pour the teriyaki sauce over the chicken and vegetables, and let it simmer for a few minutes until the sauce thickens.
  • Add the cooked noodles to the pan and toss to coat them with the sauce.

Serving

  • Serve hot, garnished with sesame seeds and sliced green onions.

Notes

For leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or soy sauce to prevent drying out.
