  • 1 can (425 g) chickpeas, rinsed and drained Canned chickpeas are convenient to use.
  • 2 pieces ripe avocados, diced Choose ripe avocados for the best flavor.
  • 1 cup cherry tomatoes, halved Fresh cherry tomatoes add sweetness.
  • 1/4 cup red onion, finely chopped Use red onion for milder flavor.
  • 1/4 cup fresh cilantro, chopped Optional for flavor.
  • 2 tablespoons olive oil Use extra virgin for best taste.
  • 1 tablespoon lemon juice Fresh lemon juice enhances flavor.
  • 1/2 teaspoon garlic powder For added flavor.
  • Salt and pepper to taste Season as desired.

Preparation

  • In a large mixing bowl, add the chickpeas, diced avocados, halved cherry tomatoes, red onion, and optional cilantro.
  • In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
  • Drizzle the dressing over the salad and gently mix to ensure all the ingredients are well coated without mashing the avocado.
  • Taste and adjust seasoning if necessary. Serve immediately or refrigerate for 10 to 15 minutes to enhance the flavors.

Notes

This salad is best served fresh but can be prepared in advance. To store, layer the avocado on top in an airtight container to minimize browning. Consume within 1-2 days.
