Ingredients

Roasted Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 head cauliflower, chopped into florets
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 piece lime, juiced
  • to taste salt and pepper

Wrap Assembly

  • 4 pieces tortillas
  • to taste fresh veggies (e.g., lettuce, tomatoes, avocado)
  • to taste creamy sauce (e.g., tahini, yogurt, or avocado dressing)

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, toss chickpeas and cauliflower with olive oil, smoked paprika, chili powder, lime juice, salt, and pepper.
  • Spread on a baking sheet and roast for 25-30 minutes, or until golden and crispy.

Assembly

  • Warm the tortillas in a pan or microwave.
  • Assemble the wraps by placing roasted chickpeas and cauliflower in each tortilla, adding fresh veggies, and drizzling with creamy sauce.
  • Roll up the tortillas, slice in half if desired, and serve immediately.

Notes

These wraps are best served fresh and warm. For extra flavor, garnish with cilantro or a squeeze of lime juice before serving. Store leftovers separately in airtight containers for up to three days.
