Preparation
In a bowl, combine the diced pineapple, red onion, jalapeño, and fresh cilantro for the pineapple pico. Squeeze the lime juice over the mixture and season with salt and pepper to taste. Stir and set aside.
In another bowl, toss the shrimp with olive oil, chipotle chili powder, garlic powder, onion powder, smoked paprika, ground cumin, salt, and pepper until the shrimp are evenly coated.
Cooking
