Ingredients

For the Chipotle Shrimp

  • 1 lb shrimp, peeled and deveined Fresh or thawed if using frozen
  • 1 tbsp olive oil
  • 1 tbsp chipotle chili powder Adjust for spice preference
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste

For the Pineapple Pico

  • 1 cup pineapple, finely diced Fresh is best
  • 1/2 medium red onion, finely diced
  • 1/2 jalapeño, seeds removed and finely chopped (optional for heat) Omit for milder flavor
  • 1/4 cup fresh cilantro, chopped

For Assembly

  • 8 small corn tortillas
  • Fresh cilantro leaves for garnish
  • Lime wedges for serving
  • Sour cream or avocado slices (optional) For topping

Instructions

Preparation

  • In a bowl, combine the diced pineapple, red onion, jalapeño, and fresh cilantro for the pineapple pico. Squeeze the lime juice over the mixture and season with salt and pepper to taste. Stir and set aside.
  • In another bowl, toss the shrimp with olive oil, chipotle chili powder, garlic powder, onion powder, smoked paprika, ground cumin, salt, and pepper until the shrimp are evenly coated.

Cooking

  • Heat a skillet or grill pan over medium-high heat. Once hot, add the shrimp and cook for 2-3 minutes per side until they turn pink and opaque.
  • While the shrimp are cooking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds per side or until soft and pliable.

Assembly

  • Assemble the tacos by placing a few shrimp in the center of each taco shell. Top with a spoonful of pineapple pico and garnish with fresh cilantro leaves.

Serving

  • Serve the tacos warm with lime wedges on the side, adding sour cream or avocado slices if desired.

Notes

Use fresh ingredients for the best flavor; adjust spice levels and do not overcook the shrimp to keep them tender.
