Ingredients

Dry Ingredients

  • 1 cup protein powder Your choice of protein powder
  • 1 cup oats Use certified gluten-free oats for gluten-free option
  • 1 tablespoon baking powder
  • 1 teaspoon salt Pinch of salt

Wet Ingredients

  • 2 cups almond milk Or milk of choice
  • 2 large eggs
  • 1/4 cup melted coconut oil Or butter
  • 1 teaspoon vanilla extract

Add-ins

  • 1/4 cup chocolate chips

Instructions

Preparation

  • Preheat your waffle iron according to the manufacturer’s instructions.
  • In a mixing bowl, combine the protein powder, oats, baking powder, and salt, mixing well.
  • In another bowl, whisk together the almond milk, eggs, melted coconut oil, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until everything is well combined.
  • Carefully fold in the chocolate chips at the end.

Cooking

  • Lightly grease the waffle iron and pour the batter according to your machine's guidelines.
  • Cook until the waffles are golden and crispy, about 4-5 minutes.
  • Repeat the process with any remaining batter and serve immediately, or let them cool for meal prep.

Notes

These waffles can be served with maple syrup, fresh fruit, Greek yogurt, nut butter, or fruit compote. Leftovers can be stored in the refrigerator for up to three days or frozen for quick breakfasts.
