Preparation
In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
In a separate medium bowl, whisk together the egg, milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the diced apple.
Cooking
Heat about 2-3 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat to 350°F (175°C).
Carefully drop rounded tablespoons of the batter into the hot oil, working in batches to avoid overcrowding the pot.
Fry for 2-3 minutes per side, until golden brown and cooked through.
