Ingredients

Fritter Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled, cored, and diced (about 1 cup)

Glaze Ingredients

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

Preparation

  • In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
  • In a separate medium bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Gently fold in the diced apple.

Cooking

  • Heat about 2-3 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat to 350°F (175°C).
  • Carefully drop rounded tablespoons of the batter into the hot oil, working in batches to avoid overcrowding the pot.
  • Fry for 2-3 minutes per side, until golden brown and cooked through.
  • Use a slotted spoon to remove the fritter bites from the oil and place them on a wire rack set over a baking sheet to drain.

Glazing

  • While the fritters are still warm, prepare the glaze. In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk, and vanilla extract until smooth.
  • Add more milk, a teaspoon at a time, if needed to reach a drizzling consistency.
  • Drizzle the glaze over the warm fritter bites.

Serving

  • Serve warm, optionally with vanilla ice cream or whipped cream, and a sprinkle of cinnamon or powdered sugar.

Notes

Store leftovers in an airtight container at room temperature for up to two days, or in the refrigerator for up to a week. Reheat in an oven at 350°F (175°C) for a few minutes to restore crispy texture.
