  • 2 cups cooked chicken, shredded Rotisserie chicken works great.
  • ½ cup mayonnaise OR Greek yogurt Use yogurt for a tangier, lighter salad.
  • 1 stalk celery, chopped Adds crunch.
  • ¼ cup red onion, diced Can swap with green onions for milder flavor.
  • 1 tsp Dijon mustard Adds depth and acidity.
  • Salt & pepper to taste

Preparation

  • Shred or chop cooked chicken into bite-sized pieces.
  • Chop celery finely and dice the red onion for crunch.
  • In a medium bowl, combine the chicken, celery, onion, mayonnaise (or Greek yogurt), and Dijon mustard.
  • Season with salt and pepper and stir until the mixture is creamy and evenly mixed.
  • Cover and refrigerate for at least 30 minutes to let flavors meld before serving.

Notes

For lower sodium, use low-sodium mayo or plain Greek yogurt and adjust salt at the end. To make it more substantial, stir in chopped toasted almonds or grapes.
