How to Make Classic Pastry Scones

  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  • In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  • Grate frozen butter into the dry mixture, then cut it in using a fork or pastry blender.
  • In a separate bowl, whisk together yogurt, cream, egg, and vanilla until well blended.
  • Add the wet ingredients to the dry mixture, along with your chosen mix-ins, and gently fold together until it forms clumps.
  • Knead the mixture by hand until it forms a ball, being careful not to overmix.
  • Pat and shape the dough into an 8-inch circle, then cut into 8 wedges and place on the baking sheet.
  • Bake for 16-18 minutes until golden brown. Allow the scones to cool on a wire rack for 10 minutes.
  • To make the glaze, combine powdered sugar with milk until smooth, then drizzle over the scones.
