Ingredients

Pasta and main ingredients

  • 8 ounces pasta (such as rotini or fusilli) Choose pasta shapes that hold dressing well.
  • 1 cup cooked chicken, diced You can also use turkey or add crispy bacon.
  • 1 cup ham, diced Feel free to mix and match proteins.
  • 1 cup cherry tomatoes, halved Use fresh, firm tomatoes.
  • 1 cup cucumber, diced Ensure cucumbers are crisp.
  • 1/2 cup cheddar cheese, cubed Mozzarella or pepper jack could also be used.

Dressing

  • 1/2 cup mayonnaise Greek yogurt can be used as a lighter option.
  • 1/4 cup Dijon mustard
  • 2 tablespoons fresh parsley, chopped For extra color, consider additional garnishing.
  • to taste Salt and pepper

Instructions

Preparation

  • Cook the pasta according to package instructions; drain and let cool.
  • In a large bowl, combine the cooked pasta, chicken, ham, cherry tomatoes, cucumber, and cheddar cheese.

Dressing

  • In a separate bowl, mix together the mayonnaise, Dijon mustard, parsley, salt, and pepper.
  • Pour the dressing over the pasta salad and toss until well combined.

Chilling

  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Store dressing separately to prevent sogginess.
