Instructions

Cooking

  • In a pan, heat some oil and add diced chicken breasts. Cook until they are browned and cooked through.
  • Add minced garlic and ginger, along with spices like curry powder, and stir for a minute until fragrant.
  • Pour in the coconut milk and let it simmer for about 5-10 minutes until the sauce thickens slightly.
  • Cook the rice according to package instructions.
  • Once the rice is ready, serve the coconut chicken over a bed of rice.
  • Top with fresh herbs, a squeeze of lime, and your choice of crunchy vegetables.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat evenly, adding a splash of coconut milk if needed. You can freeze the chicken and coconut sauce separately from the cooked rice for better texture upon reheating.
