Cookies and Cream Rice Krispie Treats

Ingredients
- 15 Oreo cookies
- 6 tablespoons salted butter plus additional for greasing pan
- 15 oz mini marshmallows divided into 7 ½ cups
- 1 teaspoon vanilla extract
- 6 cups crisped rice cereal
Instructions
- Lightly grease a 9x13" baking pan with butter and set aside.
- Break Oreo cookies into pieces by placing them in a Ziploc bag and crushing with a rolling pin to create discernable pieces.
- Melt butter in a large pot over medium-low heat. Add 10 oz of mini marshmallows and stir until melted.
- Stir in vanilla extract, then add cereal and mix until combined. Add remaining marshmallows and broken Oreos, mix briefly, and pour into prepared pan.
- Smooth the top with a spatula and allow to cool completely before cutting into squares and serving.
