Ingredients
  

Salad

  • 6 cups chopped kale
  • 4 cups shredded green cabbage
  • 1/4 cup roasted almond slivers

Dressing

  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tsp Dijon mustard
  • 3 tsp honey
  • 1 tsp finely minced shallot
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Place all dressing ingredients into a blender or food processor until smooth. Set aside.
  • Toss together kale, cabbage, and almond slivers. Just before serving, toss the salad with the dressing. Serve immediately.
