Ingredients

Wet Ingredients

  • 2 pieces ripe bananas, mashed The riper, the better for sweetness.
  • 1 cup cottage cheese Can substitute with Greek yogurt for rich creaminess.
  • 1/2 cup sugar Can reduce or use a sugar substitute for a healthier option.
  • 2 pieces eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour Can substitute half with whole wheat flour for a heartier loaf.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional) Can experiment with other spices like nutmeg or cardamom.
  • 1/2 cup chopped nuts (optional) Walnuts or pecans work well.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9 x 5 inch loaf pan.
  • In a large bowl, mix together the mashed bananas, cottage cheese, sugar, eggs, melted butter, and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking soda, salt, and cinnamon, if using.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
  • Fold in the chopped nuts if you are using them.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Store wrapped at room temperature for up to 3 days or freeze for up to 3 months. Thaw at room temperature or reheat in the toaster.
