Instructions

Preparation

  • In a bowl, mash the ripe banana thoroughly.
  • Mix in the cottage cheese, egg, and vanilla extract until well combined.
  • In another bowl, combine the baking powder, cinnamon, and oats.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just mixed.

Cooking

  • Heat a non-stick skillet over medium heat. Pour in the batter to form pancakes.
  • Cook until bubbles appear on the surface, then flip and cook until golden brown.
  • Serve warm with your favorite toppings, such as maple syrup or fresh fruit.

Notes

To store leftovers, keep uneaten pancakes in an airtight container in the refrigerator for up to three days. They can also be frozen for up to three months. Use a blender for a smoother batter if desired.
