Preparation
In a large bowl, mix together the flour, milk, eggs, 2 tablespoons of powdered sugar, and a pinch of salt until you have a smooth batter.
Heat a non-stick pan over medium heat and pour a small amount of batter into the pan, tilting the pan to spread it evenly. Cook for about 2 minutes on each side until golden.
In another bowl, mix the cottage cheese, sour cream, 50 g powdered sugar, raisins, lemon zest, lemon juice, and vanilla powder until you have a smooth filling.
Assembly
Spoon a portion of the filling onto each cooked crepe, then roll or fold to enclose the filling. Serve while warm, drizzled with additional sour cream if desired.
Notes
These crepes are best served warm, dusted with powdered sugar or drizzled with honey. They can also be enjoyed with a sprinkle of nuts or a drizzle of maple syrup for added richness. Leftovers can be stored in the refrigerator for up to three days.
