  • 1 small Diced onion Add more or less according to taste
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Pepper Black pepper or cayenne for a kick
  • 1 cup Cheese (optional) Cheddar, mozzarella, or your favorite
  • 1 tablespoon Olive oil or butter For greasing the baking dish

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease a baking dish with olive oil or butter.
  • In a large bowl, combine cottage cheese, eggs, diced bell peppers, chopped spinach, and diced onion.
  • Season with salt and pepper to taste.
  • Pour the mixture into the prepared baking dish for baking.
  • If you like, sprinkle cheese on top for added flavor.
  • Bake for 25-30 minutes, or until set and lightly golden.
  • Allow the bake to cool for a few minutes before slicing.
  • Serve warm for a nourishing breakfast or snack.

Notes

This dish can be customized with different vegetables or cheese. Serve warm with fresh salad or avocado. Leftovers can be stored in an airtight container for up to four days. It's also freezer-friendly if sliced beforehand.
