Preparation
Add the oats, cottage cheese, eggs, baking powder, cinnamon, and any optional ingredients like salt or stevia into a blender or food processor.
Blend the mixture for about 30 seconds, ensuring everything is well combined.
Scrape down the sides of the blender and mix for an additional 10 seconds.
Cooking
Heat a large non-stick skillet over medium-low and lightly spritz it with oil.
Pour around a quarter cup of the batter for each pancake onto the skillet.
Cook for about 2-3 minutes until the edges have set and the bottoms are golden brown.
Flip the pancakes and cook for another 2-3 minutes until fully cooked through.
