  • 1/4 cup honey or maple syrup Use agave syrup as an alternative if desired
  • 1/4 cup protein powder Optional ingredient for added protein
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup chocolate chips or raisins Optional mix-ins for flavor

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the cottage cheese, oats, almond flour, honey (or maple syrup), protein powder, vanilla extract, baking powder, and salt. Mix until well combined.
  • Carefully fold in chocolate chips or raisins if desired for added flavor.
  • Scoop tablespoons of the dough onto a lined baking sheet, ensuring they are spaced about 2 inches apart.
  • Bake for 12-15 minutes or until the edges are slightly golden.
  • Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.

Notes

These cookies are great warm or at room temperature. For extra flavor, try pairing with Greek yogurt or a drizzle of nut butter. They store well at room temperature for up to one week or can be frozen for up to three months.
