  • 1 cup cottage cheese High protein content.
  • 2 large eggs For a fluffier waffle, separate the whites and beat them.
  • 1/2 teaspoon baking powder
  • 1 tablespoon cold-pressed virgin coconut oil Can substitute with olive oil.
  • to taste Honey For sweetness.

Optional Toppings

  • to taste Smoked salmon For a savory option.
  • to taste Crème fraîche Pairs well with smoked salmon.

Instructions

Preparation

  • Blend the oats, cottage cheese, eggs, baking powder, and coconut oil until smooth.
  • Pour the batter into a bowl and let it sit for about 10 minutes.
  • Preheat your waffle iron.

Cooking

  • Once preheated, pour or scoop the batter onto the hot waffle iron.
  • Cook the waffles for approximately 4 minutes or until they are cooked through and have a nice golden color.
  • Transfer the waffles to a cooling rack and serve immediately with your favorite toppings.

Notes

Store uneaten waffles in an airtight container in the fridge for up to three days. For longer storage, freeze between parchment paper for up to a month. Reheat in a toaster or oven.
