  • 1 lb Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, diced (Yukon Gold or Russet work best)
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 2 cups kale or spinach, chopped
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional, for heat)
  • 1 tbsp olive oil (if needed, for sautéing)
  • ½ cup grated Parmesan cheese (for garnish)

Instructions

Cook the Sausage & Aromatics

  • In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up as it cooks.
  • Once browned, add the diced onion and minced garlic, sautéing for about 3-4 minutes until the onion becomes translucent.

Simmer the Potatoes

  • Stir in the diced potatoes, chicken broth, salt, black pepper, and red pepper flakes if using.
  • Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 15-20 minutes, or until the potatoes are tender.

Finish with Cream & Greens

  • Once the potatoes are cooked, stir in the heavy cream and chopped kale or spinach.
  • Let the soup simmer for an additional 5 minutes, allowing the greens to wilt and the flavors to meld.

Serve & Enjoy!

  • Ladle the soup into bowls and garnish with grated Parmesan cheese.

Notes
