  • 1 lb chicken breast, diced
  • 1 tablespoon Cajun seasoning Add more for a spicier soup
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream For a vegan version, use coconut milk
  • 2 cups corn (frozen or fresh)
  • to taste Salt and pepper
  • for garnish Chopped green onions

Instructions

Cooking

  • In a large pot, add the diced chicken and sprinkle with Cajun seasoning. Cook over medium heat until browned.
  • Add the onion, garlic, and bell pepper, and sauté until the vegetables are softened.
  • Pour in the chicken broth and bring to a simmer.
  • Stir in the heavy cream and corn, and let it simmer for about 10 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes

For an extra kick, add more Cajun seasoning or a few dashes of hot sauce. This soup can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
