Ingredients

Main Ingredients

  • 1 can 15 oz corn, drained
  • 1/2 cup red bell pepper, diced Fresh
  • 1/2 cup green bell pepper, diced Fresh
  • 1/2 cup red onion, finely chopped Fresh

Dressing

  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter option.
  • 1 tablespoon lime juice Adjust according to taste

Instructions

Preparation

  • In a large bowl, combine the corn, red bell pepper, green bell pepper, and red onion.
  • In a separate bowl, mix the mayonnaise, lime juice, salt, and pepper together.
  • Pour the mayonnaise mixture over the corn and vegetable mixture and stir until well combined.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Best served chilled. Can be garnished with fresh herbs or paprika. Store in an airtight container and consume within 3-4 days for optimal freshness.
