  • 2 cups sliced cucumber
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1/4 cup chopped fresh dill or chives
  • Salt and pepper to taste
  • Optional: Celery and/or red onion for added crunch

Instructions
 

  • In a mixing bowl, whisk together mayonnaise, sour cream, Dijon mustard, and lemon juice until smooth. Stir in chopped dill or chives, salt, pepper, and optional celery/red onion.
  • Add chilled shrimp and sliced cucumber to the dressing. Gently toss to coat evenly.
  • Cover the salad and refrigerate for at least 30 minutes to enhance flavors.
  • Serve chilled on a platter, garnished with additional dill or chives.

Notes

For extra freshness, squeeze additional lemon juice over the salad before serving.
